Originally from Madrid, Alvaro Margullon grew up visiting the bars of his city with his father every weekend. He decided to graduate in Hospitality and then moved to London to continue learning and get in touch with the international mixology scene. There he started as a bartender and refined his technique behind the cocktail bar at Iberica Restaurants.
He then decides to return to his city with very clear ideas and work on a new project in the city called Platea, where he has the opportunity to learn the hospitality secrets of Luca Anastasio and Diego Cabrera.
At the end of 2015, he started as Head bartender at the renovated NH Eurobuilding Hotel, where he continued creating cocktail menus and concepts with Diego Cabrera, owner of Salmon Guru.
After a while, he begins the biggest project of his career as Head bartender of Angelita Madrid, one of the best cocktail bars in Spain. A unique space where the owners Mario and David give him the opportunity to grow in the industry and create cocktail projects together, such as having his own garden inside the bar to use as ingredients in cocktails, working on sustainability and preparing cocktails at the highest level. Thanks to this, he and his team managed to win three consecutive times the best bar in Spain according to FIBAR.
In 2022, he wants to continue growing and will be moving to Hotel Thompson as Beverage Manager. There, he manages all aspects of beverages and continues to focus on creating genuine connections with customers.
He then decided to take on a new challenge and start as Beverage Director at Sushita Restaurant, creating menus focused on Japanese culture for eight of the company's restaurants.
