Making big changes can seem daunting, so sometimes it's best to sweat the small stuff. We sat down with Alvaro Margullon of Madrid's Angelita, to found out how he's approaching sustainability in his bar

Q: What does sustainability mean to you?
A: For me it is not a concept of passion, it is a responsibility as an industry and as a human being.

Q: What are you doing at Angelita, to be more sustainable?
A: Every act for the planet is important, no matter how small. We try to transmit our philosophy to our clients, with our own garden, using only local produce, trying not to generate waste and working with small producers.

Q: Lastly, any advice for someone looking to start their sustainability journey?
A: Find how to work more locally to have a direct impact, observe, listen and think about how you can improve the quality of life of your team, always try to offer a better-quality product that has a story, because the customer will always value it.
